KELZAN® Xanthan Gum is produced by a fermentation process. Its pseudoplastic flow behavior provides high viscosities at low shear rates to improve suspension and emulsion stabilisation. Xanthan gum imparts excellent stability to oil-in-water emulsions by preventing the oil droplets from coalescing.
